From Olive Mill Waters (OMW) to Olivae collection: a double example of circularity within the food chain. Italy is one of the largest producers of leather and olive oil globally. In fact, Olivae leather exploits the natural tanning properties of olives, thanks to the virtuous recovery of waste generated in abundance by the mill during pressing.
